Jon started his restaurant career as a humble dishwasher. He knew that he wanted to be a chef.
He lived in Rome, Florence and a small town in the Veneto called Puos d’alpago where he staged at a one Michelin starred restaurant called Locanda San Lorenzo. There here was fortunate enough to work the primi station where he learned the subtle nuances of cooking pasta, risotto and ragu.
In 2018 Jon and Jason Romanoff, opened a new restaurant that celebrated their shared love for Italian cuisine: Viaggio. A modern Italian restaurant that celebrates the Italian ethos of using the best products available, in the season they’re grown. Viaggio is a culmination of a lifetime of experience and love for cooking.
